14 ounces smoked sausage
2 bell peppers any color
1 yellow onion
1 tablespoon olive oil divided
1 teaspoon Italian seasoning
1 teaspoon salt
1 teaspoon cracked pepper
Instructions
Cut the sausage into ½ inch thick rounds and thinly slice the peppers and onions into ¼ inch strips.
Mix the Italian seasoning, salt, and pepper in a bowl.
Toss sausage pieces with half the olive oil and about a quarter of the seasoning until evenly coated.
Place the sausage in the air fryer basket and cook at 390 degrees for 5 minutes.
Meanwhile, combine the peppers and onions with the remaining oil and seasoning.
Add the vegetables to the air fryer basket with the sausage, mix gently, and air fry at 390 degrees for 15 more minutes, shaking halfway through until the vegetables soften.
Serve while warm.
