  • 6 medium carrots
  • 1 tablespoon olive oil
  • ¼ teaspoon coarse Kosher salt
  • ⅛ teaspoon black pepper
  • 1 tablespoon unsalted butter melted
  • 1 ½ tablespoons honey
  • 2 cloves garlic minced

Instructions

  1. Warm up the air fryer to 370° F and let it sit for 5 minutes.
  2. Cut the carrots into diagonal pieces about 2 inches long, then halve or quarter them lengthwise depending on thickness.
  3. Toss the carrot pieces in a bowl with olive oil, salt, and pepper until evenly coated.
  4. Spread the carrots in a single layer inside the air fryer basket and cook at 370° for 12 minutes, shaking the basket halfway to turn them.
  5. Clean the bowl, then whisk together melted butter, honey, and minced garlic in it.
  6. After 12 minutes, transfer carrots back to the bowl and drizzle the honey garlic butter over them, stirring gently to cover each piece.
  7. Place the carrots back in the air fryer and cook 6 to 8 more minutes until they are soft in the center and have golden edges. Serve right away.

Notes

  • Recipe makes 3 smaller servings or 2 generous servings and may be doubled to serve more people
  • For a double recipe, you may need to cook the carrots in batches
  • When all batches are done, you can place all batches in the air fryer for 1-2 minutes to heat through
