1 lb boneless skinless chicken thighs cut to 1 inch (2-cm) pieces
1 tablespoon vegetable oil
1/2 teaspoon salt
1/3 cup cornstarch
2 tablespoons ketchup
2 tablespoons Shaoxing wine or dry sherry
2 tablespoons rice vinegar
2 tablespoons light soy sauce or soy sauce
3 tablespoons brown sugar
2 tablespoons water
2 teaspoons cornstarch
1 tablespoon peanut oil or vegetable oil
2 cloves garlic minced
2 teaspoons minced ginger
1/2 small white onion chopped
1 bell pepper chopped (I used a mix of colors in this recipe)
Instructions
In a large bowl, mix the chicken pieces with vegetable oil and salt and allow them to marinate for about 10 minutes.
Coat the marinated chicken pieces with cornstarch, making sure some dry cornstarch remains visible.
Arrange the chicken in the air fryer basket in a single layer, avoiding overlap. Spray the chicken lightly with oil to cover dry areas.
Air fry the chicken at 450°F (230°C) for 8 minutes until the chicken changes to a pale yellow color.
Turn or shake the chicken and continue cooking for another 5 to 6 minutes until golden brown. Transfer the cooked chicken to a plate to cool slightly.
Combine all the sauce ingredients in a small bowl and mix well.
Heat the peanut oil in a large skillet until hot and add the garlic and ginger, cooking and stirring briefly until fragrant.
Add the bell pepper and chopped onion to the skillet and cook for 30 seconds while stirring.
Stir the sauce mixture again to dissolve the cornstarch fully and pour it into the skillet. Cook while stirring until the sauce thickens.
Add the chicken back into the skillet and toss well to coat with the thickened sauce. Serve immediately while hot.
Notes
I highly recommend using chicken thigh for this dish so the meat remains juicy after air frying
Air frying cooks the inside of the chicken quite fast and chicken breast can end up a bit dry if you’re not careful
However, if you decide to use chicken breast, reducing the air frying time by 3 to 4 minutes will help
