  • 1/2 medium onion thickly sliced
  • 3 tablespoons olive oil
  • 1 tablespoon fresh minced ginger
  • 3 cloves garlic minced
  • 2 tablespoon low sodium soy sauce or use Tamari for Gluten Free
  • 1 tablespoon rice vinegar or use distilled white vinegar for Gluten Free
  • 1 teaspoon sesame oil
  • 1 teaspoon smoked paprika
  • 2 teaspoons honey
  • 1 teaspoon hoisin sauce
  • salt to taste
  • Ground black pepper to taste

Instructions

  1. Mix all the marinade ingredients together in a bowl until well combined.
  2. Place the chicken in one bowl and the broccoli with onion in another bowl.
  3. Pour the marinade evenly over both bowls and toss to coat everything properly.
  4. Preheat the air fryer to 380 degrees F.
  5. Arrange the chicken in a single layer in the air fryer basket and cook for 10 minutes.
  6. Add the broccoli and onion to the basket with the chicken, stir to combine, then air fry for another 8 to 11 minutes until the chicken is fully cooked, stirring halfway through.
  7. Serve the dish alongside white or brown rice as desired.

Notes

  • To keep the chicken moist, cut it into even 1-inch pieces and monitor the cooking closely
  • Stop cooking the chicken once it nears 160 degrees F internal temperature and let the veggies finish cooking to avoid drying out
  • Marinate chicken for at least 10 minutes for best flavor and don’t overcrowd the air fryer basket to ensure even cooking and crispness
