  • 2 boneless skinless chicken breasts
  • Kosher salt
  • Freshly ground black pepper
  • 1/3 cup all-purpose flour
  • 2 large eggs
  • 1 cup panko bread crumbs
  • 1/4 cup finely grated Parmesan
  • 1 tsp dried oregano
  • 1/2 tsp crushed red pepper flakes
  • 1/2 tsp garlic powder
  • 1 cup store-bought or homemade marinara sauce
  • 1 cup shredded mozzarella
  • Chopped fresh parsley for serving

Instructions

  1. Split each chicken breast horizontally to make four thin pieces; season both sides with salt and black pepper.
  2. Put flour in a shallow dish and season with salt and pepper. In another bowl, beat the eggs. In a third bowl, mix panko, Parmesan, oregano, red pepper flakes, and garlic powder.
  3. Coat each chicken piece first with flour, shaking off extra, then dip into the eggs allowing excess to drip off. Finally, press both sides into the panko mixture until well covered.
  4. Arrange the coated chicken in a single layer inside the air fryer basket. Cook at 400° for about 5 minutes per side until cooked through. Then spoon marinara sauce on top and sprinkle with mozzarella. Continue cooking at 400° for 3 minutes until the cheese is melted and slightly browned.
