10 Minute Air Fryer Chicken Sausage and Veggies

This quick and easy air fryer chicken sausage and veggies recipe is perfect for lazy days. Loaded with protein and colorful vegetables, it is a delicious and healthy air fryer meal you can enjoy any day of the week.

Ingredients

  • 1 large red bell pepper – cut into 1-inch pieces
  • 1 large orange bell pepper – cut into 1-inch pieces
  • 1 red onion – peeled and cut into 1-inch pieces
  • 1 medium zucchini – cut into 1-inch pieces
  • 1 tablespoon avocado oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon kosher salt
  • pinch of black pepper
  • 1 package chicken sausage (12 oz) – I used a robust Italian flavor

Instructions

  1. Chop the veggies and add them to a large bowl then drizzle with olive oil and toss to coat.
  2. In a smaller bowl, mix the garlic powder onion powder Italian seasoning kosher salt and black pepper then add the spice blend to the veggies and toss to coat.
  3. Slice the sausage into 3/4 inch rounds and add to the bowl with the veggies and toss everything together.
  4. Preheat the air fryer to 390 degrees F if needed and spray the basket with cooking spray.
  5. Add the veggies and sausage in an even layer to the air fryer basket and cook for 10 minutes flipping halfway through.
  6. Remove from the air fryer and serve as is or with cooked cauliflower rice or brown rice.

Notes

  • Buy good quality chicken sausage
  • You can also use kielbasa’s
  • Chop the veggies into even sizes (1-inch pieces) so they cook evenly
  • Toss everything in the air fryer basket at least once during the cooking time to ensure it all gets nice and golden and crispy
  • You can store this chicken sausage and veggies in an airtight container in the refrigerator for up to 4 days
  • Easily reheat in the air fryer at 350 degrees F for a few minutes
