Enjoy crispy and fresh air fryer rice paper noodle rolls that are quick and simple to make. This easy recipe uses simple ingredients to create delicious, crunchy rolls perfect for any occasion.

  • 2 x 85g pkt Indomie Instant Noodles Mi Goreng Fried Noodles
  • 150g (1 cup) frozen mixed vegetables (see note)
  • 180g (1 cup) chopped cooked chicken
  • 1 tbsp oyster sauce
  • 2 green shallots thinly sliced
  • 15 (20cm-diameter) round rice paper sheets
  • 1 tsp sesame seeds
  • 60ml (¼ cup) sweet chilli sauce
  • 1 tbsp fresh lime juice

Instructions

  1. Follow the packet directions to cook the noodles in boiling water, adding the frozen vegetables during the last 30 seconds, then drain well.
  2. Put the noodle mix in a large bowl and stir in the oyster sauce, half the shallots, and the reserved seasoning packets thoroughly, then mix in the chicken.
  3. Prepare a tray with baking paper and soak one rice paper sheet in warm water for 30 seconds until pliable but still firm, then place on a board.
  4. Spoon about ¼ cup of the noodle filling near the bottom of the rice paper, fold the sides in, and roll it up tightly; place on the tray and repeat with the rest.
  5. Lightly spray the rolls with oil and sprinkle sesame seeds on top.
  6. Air fry the rolls in batches at 200C for 15 minutes or until crispy.
  7. Mix the sweet chilli sauce, lime juice, and remaining shallots in a small bowl and serve as a dipping sauce with the rolls.
