The Anti-Inflammatory Cauliflower Chicken Soup is a nourishing and wholesome meal designed to boost your immune system and reduce inflammation with fresh ingredients and warm spices.

Ingredients

  • 1 tablespoon olive oil
  • 1 onion chopped
  • 3 cloves garlic minced
  • 1– inch piece ginger grated
  • 1 teaspoon turmeric
  • 1 teaspoon cumin
  • 1 large head of cauliflower chopped
  • 2 cups cooked chicken shredded
  • 4 cups chicken broth
  • 1 cup coconut milk
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Prepare the Aromatics: In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic and grated ginger, cooking for another minute until fragrant.
  2. Add Spices: Stir in the turmeric and cumin, allowing the spices to toast for about 1 minute to release their flavors.
  3. Cook the Cauliflower: Add the chopped cauliflower to the pot, stirring to coat with the spices and aromatics. Pour in the chicken broth and bring the mixture to a boil. Reduce the heat to a simmer and cook until the cauliflower is tender, about 15 minutes.
  4. Blend the Soup: Use an immersion blender to blend the soup until smooth and creamy. Alternatively, transfer the soup to a blender in batches and blend until smooth, then return it to the pot.
  5. Add Chicken and Coconut Milk: Stir in the shredded chicken and coconut milk, simmering until the chicken is heated through. Season the soup with salt and pepper to taste.
  6. Serve: Ladle the soup into bowls and garnish with fresh cilantro. Serve hot and enjoy!

Notes

  • If you prefer a chunkier soup, blend only half of the soup and leave the rest with chunks of cauliflower and chicken
  • Taste and adjust the seasoning as you go
  • The right amount of salt and pepper can make a big difference
