- 2 cups all-purpose flour
- 1/2 cup white sugar
- 1/2 cup light brown sugar loosely packed
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 1 large room temperature egg
- 1 cup milk 2% or whole room temp
- 1/3 cup melted and cooled butter or vegetable oil
- 1 teaspoon vanilla extract
- 1 to 1 1/4 cups diced apricots
- 1/3 cup sliced almonds
Instructions
- Preheat oven to 350°F 175°C.
- In a large bowl, whisk together flour, white sugar, brown sugar, baking powder, and salt.
- In another bowl, beat the egg then add milk, melted butter, and vanilla extract and mix well.
- Pour wet ingredients into dry ingredients and stir until just combined.
- Fold in diced apricots and sliced almonds.
- Pour batter into a greased loaf pan.
- Bake for 50-60 minutes or until a toothpick inserted comes out clean.
- Let cool before slicing and serving.
Notes
- For best results, use fresh apricots and room temperature ingredients
- You can substitute butter with oil for a dairy-free version
