Ingredients

2 cups all-purpose flour
1/2 cup white sugar
1/2 cup light brown sugar loosely packed
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1 large room temperature egg
1 cup milk 2% or whole room temp
1/3 cup melted and cooled butter or vegetable oil
1 teaspoon vanilla extract
1 to 1 1/4 cups diced apricots
1/3 cup sliced almonds
Instructions
Preheat oven to 350°F 175°C.
In a large bowl, whisk together flour, white sugar, brown sugar, baking powder, and salt.
In another bowl, beat the egg then add milk, melted butter, and vanilla extract and mix well.
Pour wet ingredients into dry ingredients and stir until just combined.
Fold in diced apricots and sliced almonds.
Pour batter into a greased loaf pan.
Bake for 50-60 minutes or until a toothpick inserted comes out clean.
Let cool before slicing and serving.
Notes
For best results, use fresh apricots and room temperature ingredients
