- 2 cups of sliced canned or fresh apricots or peaches
- 1/4 cup (1/2 stick) unsalted butter
- chilled and cubed
- 3 teaspoons cinnamon
- 1/2 teaspoon nutmeg
- 1/2 teaspoon salt
- 1 cup self-rising flour
- 3/4 cup (1 1/2 sticks) unsalted butter
- room temperature
- 3/4 cup sugar
- 3 large eggs
- 3 teaspoons vanilla extract
Instructions
- Preheat oven to 350°F.
- Combine apricots, chilled butter, cinnamon, and nutmeg for the fruit mixture.
- In a separate bowl, mix salt, flour, room temperature butter, and sugar to create the batter.
- Beat in eggs and vanilla extract until smooth.
- Pour half the batter into a greased baking dish, spread fruit mixture over it, then top with remaining batter.
- Bake for 45 to 50 minutes or until a toothpick comes out clean.
Notes
- For a richer flavor, use fresh apricots and let the batter rest for 10 minutes before baking
