A delightful apricot buckle that is irresistibly sweet and easy to prepare, perfect as a summer dessert to enjoy with family and friends.

Ingredients

  • 2 cups of sliced canned or fresh apricots or peaches
  • 1/4 cup (1/2 stick) unsalted butter
  • chilled and cubed
  • 3 teaspoons cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1 cup self-rising flour
  • 3/4 cup (1 1/2 sticks) unsalted butter
  • room temperature
  • 3/4 cup sugar
  • 3 large eggs
  • 3 teaspoons vanilla extract

Instructions

  1. Preheat oven to 350°F.
  2. Combine apricots, chilled butter, cinnamon, and nutmeg for the fruit mixture.
  3. In a separate bowl, mix salt, flour, room temperature butter, and sugar to create the batter.
  4. Beat in eggs and vanilla extract until smooth.
  5. Pour half the batter into a greased baking dish, spread fruit mixture over it, then top with remaining batter.
  6. Bake for 45 to 50 minutes or until a toothpick comes out clean.

Notes

  • For a richer flavor, use fresh apricots and let the batter rest for 10 minutes before baking
