3 tsp granulated white sugar
2 tsp sesame seeds
1 tsp garlic crushed
2 to 3 tbsp green onion chopped
1 ½ tbsp soy sauce
3 tsp rice vinegar
3 tsp Chinese chili oil
1 tsp sesame oil
3 tsp salt
Instructions
Prepare all ingredients needed for the salad.
Combine sugar, sesame seeds, garlic, and green onion in a bowl and mix well.
Add soy sauce, rice vinegar, chili oil, and sesame oil to the mixture then leave it aside.
Trim the ends off each cucumber then secure each between chopsticks to avoid cutting through completely.
Make angled diagonal slices along the cucumber length, then flip and cut perpendicular slices to form spirals, repeat for all cucumbers.
Place cucumber spirals in a bowl and sprinkle with salt, gently massage to coat and let rest for 8 to 10 minutes.
Rinse the cucumbers under cold water to remove excess salt.
Pour the prepared marinade over the cucumbers and toss until the salad is evenly coated, then serve.
Notes
Always cut cucumbers at an angle to create the spiral effect
Soaking cucumbers in salt firms them up
rinse well up to three times to remove extra salt
For best flavor, refrigerate the salad in marinade for at least an hour before serving
