  • 4 boneless skinless chicken breasts
  • 1 lb fresh asparagus trimmed and cut into 1 inch pieces
  • 6 slices of bacon chopped
  • 3 cups of diced potatoes about ½ inch cubes
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 teaspoon fresh thyme leaves
  • ½ teaspoon paprika
  • 1 cup shredded sharp cheddar cheese
  • Salt and freshly ground black pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Heat your oven to 375°F 190°C and grease a 9×13 inch baking dish lightly.
  2. Cook the bacon in a skillet over medium heat until it becomes crisp, then place it on a paper towel to drain, leaving the fat in the pan.
  3. Add diced onion to the skillet and cook until tender, then stir in minced garlic and cook until fragrant, about one minute.
  4. Move the onion and garlic aside, raise the heat to medium-high, and add the chicken breasts. Season with salt, pepper, and paprika and sear each side for 3 to 4 minutes until golden.
  5. Take the chicken out and slice it into strips. In the same skillet, add the diced potatoes and cook them for around 5 minutes until beginning to soften.
  6. Spread half the potatoes into the baking dish, then layer the chicken slices, cooked bacon, and asparagus on top.
  7. Mix the heavy cream, chicken broth, and thyme together and pour evenly over the ingredients.
  8. Sprinkle with shredded cheddar cheese and bake uncovered for 25 to 30 minutes until the cheese melts and turns golden.
  9. Let the casserole rest for about 5 minutes before serving to thicken the sauce.

  • For crisp tops, broil 2–3 minutes at the end
