A creamy and comforting bowl of bacon cheddar gnocchi soup, perfect for chilly days. Packed with rich cheddar cheese, tender gnocchi, and smoky bacon in a savory broth.

Ingredients

  • 810 slices bacon cooked and chopped
  • 1 tbsp butter or olive oil
  • 1 large onion diced
  • 2 large carrots peeled and sliced
  • 4 cups chicken broth
  • 12 tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder or 4 cloves minced garlic
  • ¼ tsp dried thyme
  • ½1 tsp red chili flakes
  • 16 oz gnocchi
  • 2 cups heavy cream or half-and-half
  • 2 cups cheddar cheese medium or sharp shredded

Instructions

  1. Cook bacon in a large pot until crisp then remove and chop.
  2. Add butter or olive oil to the pot and sauté onion and carrots until soft.
  3. Pour in chicken broth and bring to a boil.
  4. Add salt, black pepper, garlic powder, thyme, and red chili flakes then reduce heat to simmer.
  5. Stir in gnocchi and cook until tender.
  6. Pour in heavy cream and add cheddar cheese, stirring until cheese melts and soup thickens.
  7. Add cooked bacon back into the soup and heat through.
  8. Serve warm.

Notes

  • For extra creaminess, use half heavy cream and half half-and-half
  • Adjust chili flakes to your preferred spice level
