  • 2 medium zucchinis sliced into ¼ inch rounds
  • 2 tbsp olive oil
  • ½ cup freshly grated parmesan cheese
  • ½ tsp garlic powder
  • ½ tsp Italian seasoning
  • ¼ tsp sea salt
  • ¼ tsp black pepper
  • chopped parsley or lemon zest for garnish

Instructions

  1. Heat your oven to 425°F 220°C and prepare a baking sheet by lining it with parchment paper.
  2. Cut zucchini into uniform rounds about ¼ inch thick.
  3. In a bowl, coat the zucchini slices thoroughly with olive oil, parmesan, garlic powder, Italian seasoning, salt, and pepper.
  4. Lay the coated zucchini in a single layer on the baking sheet.
  5. Bake for 18 to 20 minutes until the edges turn golden brown and get crispy.
