This Baked Pesto Chicken is a simple chicken recipe perfect for an easy dinner or family dinner. It’s a quick pesto recipe ideal for a weeknight meal that delivers delicious flavor with minimal effort.

  • 4 boneless skinless chicken breast halves
  • 1/2 cup refrigerated basil pesto
  • 1 cup mozzarella cheese shredded
  • 3 plum tomatoes sliced (optional)

Instructions

  1. Heat your oven to 400°F and prepare a baking sheet by lining it with foil and spraying with cooking spray.
  2. In a bowl, toss the chicken breasts with the basil pesto until well coated.
  3. Arrange the pesto-coated chicken on the baking sheet and bake for 35 minutes until fully cooked.
  4. Remove the chicken from the oven, then layer with sliced tomatoes and shredded mozzarella cheese.
  5. Return the chicken to the oven and bake for another 5 to 7 minutes until the cheese is melted and bubbly. Serve warm.
