1 lb fully-cooked frozen lobster meat thawed- see notes
½ cup (1 stick) unsalted butter divided
3 cloves of garlic finely minced or pressed
1 tablespoon fresh chopped chives plus more for garnishing
1 teaspoon lemon zest
2 teaspoons fresh squeezed lemon juice
½ teaspoon Creole Cajun Seasoning– homemade or store-bought
freshly ground black pepper to taste
4 split-top brioche hot dog buns
Mayonnaise for brushing inside brioche buns
Instructions
Dry the lobster meat with a paper towel and chop into desired chunk sizes.
Melt two tablespoons of butter in a skillet over medium heat, add lobster and garlic, and cook while stirring for about 2 to 3 minutes until warmed and coated.
Transfer lobster to a bowl using a slotted utensil, then mix in chives lemon zest lemon juice Creole Cajun seasoning and black pepper.
Clean the skillet wipe away leftover butter, then heat 2 to 3 tablespoons of butter and brush it onto sides of the buns, toasting them in the skillet until golden.
Lower heat, melt remaining butter and pour over lobster meat tossing to coat.
Spread mayonnaise inside each bun, fill buns evenly with lobster mixture, garnish with extra chives, and serve immediately with lemon wedges and chips if desired.
Notes
You can use ready-to-eat thawed frozen lobster meat or uncooked lobster meat which must be cooked until opaque
