1 lb frozen tater tots about 3 cups
1 lb ground turkey or pork breakfast sausage
2 teaspoons olive oil
1 diced bell pepper any color about 1 cup
½ small yellow onion finely diced about ½ cup
12 large eggs
1 cup shredded cheddar cheese omit for dairy-free
10 10-inch burrito size flour tortillas use gluten free if needed
Instructions
Preheat the oven and cook the tater tots following the package instructions until crispy.
Heat a medium skillet over medium-high heat, crumble and cook the sausage until no longer pink, about 7 minutes, then drain on paper towels.
In a large skillet over medium heat, warm olive oil then add diced pepper and onion; sauté for around 6 minutes until soft.
Whisk the eggs in a bowl and pour into the skillet with the vegetables, cook stirring gently until eggs are firm, about 3 to 5 minutes.
Fold the cooked sausage into the egg mixture and remove from heat, let cool for 10 minutes.
Wrap tortillas in damp paper towels and microwave 15 to 20 seconds to soften.
Spoon about 1 cup of the egg-sausage mixture onto each tortilla, add 4 tater tots and 1 to 2 tablespoons of cheese, then fold and roll tightly.
Place burritos on a baking sheet while assembling.
Wrap each burrito first in parchment paper then in foil, label and freeze up to 3 months.
Notes
For gluten free option use Siete grain-free tortillas and warm each tortilla in a skillet before filling
For dairy free, omit cheese or substitute with dairy-free shreds
