  • 1 tsp Thyme

  • 2 tbsp Olive Oil
  • 1 tbsp Tomato Paste
  • 2 small Yellow Onions
  • diced
  • 1 head Cabbage
  • medium
  • chopped
  • 1 cup Tomatoes
  • diced
  • 3 stalks celery
  • sliced
  • 1 Red bell pepper
  • diced
  • 1 yellow bell pepper
  • diced
  • 1 orange bell pepper
  • diced

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced yellow onions and minced garlic, sauté until onions are translucent.
  3. Stir in tomato paste and cook for another minute.
  4. Add chopped cabbage, diced tomatoes, celery, and all bell peppers.
  5. Pour in beef broth and sprinkle fresh thyme.
  6. Season with salt and pepper if desired.
  7. Bring to a boil then reduce heat and simmer uncovered for 20 minutes until vegetables are tender.
  8. Serve hot and enjoy your healthy cabbage soup.

Notes

  • For a vegetarian version, substitute beef broth with vegetable broth
