Ingredients

Scale
  • 2 large chicken breasts
  • 2 tablespoons Cajun seasoning
  • 2 medium sweet potatoes peeled and diced
  • 2 tablespoons olive oil
  • 1 bell pepper diced
  • 1 red onion diced
  • 1 cup broccoli florets
  • Salt and pepper to taste
  • Fresh cilantro for garnish
  • Lime wedges for serving

Instructions

  1. Preheat Oven: Start by preheating your oven to 425°F (220°C).
  2. Prepare Sweet Potatoes: In a large bowl, toss the diced sweet potatoes with 1 tablespoon of olive oil, salt, and pepper. Spread them out on a baking sheet in a single layer.
  3. Bake Sweet Potatoes: Place the baking sheet in the oven and roast the sweet potatoes for about 20-25 minutes or until tender and slightly caramelized.
  4. Season Chicken: While the sweet potatoes are roasting, rub the chicken breasts with 1 tablespoon of olive oil and then coat evenly with Cajun seasoning.
  5. Cook Chicken: Heat a skillet over medium-high heat and add the seasoned chicken. Cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). Remove the chicken from the skillet and let it rest.
  6. Sauté Veggies: In the same skillet, add the diced onion, bell pepper, and broccoli. Sauté for about 5-7 minutes, until the vegetables are tender yet still crisp.
  7. Slice Chicken: Once rested, slice the chicken into strips.
  8. Assemble Bowls: In individual bowls, layer roasted sweet potatoes, sautéed veggies, and sliced chicken.
  9. Garnish and Serve: Top each bowl with fresh cilantro and serve with lime wedges for an extra burst of flavor.
