This Cajun Sausage and Rice Skillet is a quick and easy one-pan meal full of bold smoky flavors. Perfect for a family friendly Cajun dinner, it combines spicy sausage and rice with colorful vegetables for an irresistible Cajun recipe.

  • 12 oz Smoked Sausage such as Andouille or Kielbasa sliced into ½-inch rounds
  • 1 cup Rice long-grain white rice rinsed
  • 1 Bell Pepper red diced
  • 1 Bell Pepper green diced
  • 1 medium Onion yellow or white diced
  • 3 cloves Garlic minced
  • 1 ½ cups Chicken Broth
  • 2 tbsp Cajun Seasoning store-bought or homemade
  • 1 tbsp Olive Oil
  • Salt and Pepper to taste
  • Fresh Parsley optional for garnish
  • Green Onions optional for garnish
  • Hot Sauce optional for serving

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Cook sliced sausage until browned and crispy on the edges, then remove and set aside.
  3. Add diced onion and bell peppers to the skillet and sauté until softened.
  4. Add minced garlic and cook until fragrant.
  5. Stir in rinsed rice and toast for 2 minutes.
  6. Pour in chicken broth and sprinkle Cajun seasoning, bring to a boil.
  7. Reduce heat to low, cover, and simmer until rice is tender and liquid is absorbed.
  8. Add cooked sausage back to skillet, stir and cook for 3-5 minutes to combine flavors.
  9. Serve hot with optional parsley, green onions, and hot sauce.
