8 strips bacon whole strips
2 ripe avocados peeled and pitted
2 tbsp lemon juice divided
0.5 tsp fine sea salt divided
0.33 cup mayonnaise
0.5 tsp honey
0.25 tsp onion powder
0.25 tsp dried basil
freshly ground black pepper to taste
3 cups shredded rotisserie chicken breast or leftover turkey
4 large spinach wraps regular or gluten-free
4 green leaf lettuce leaves torn
1 tomato chopped
1 cup finely shredded Monterey Jack cheese
Instructions
Heat your oven to 425 degrees F and cover a large baking sheet with aluminum foil.
Place the bacon strips flat on the foil without any overlap and bake for 15 minutes until they are crisp and golden brown. Remove the bacon and drain on paper towels, keeping the strips whole.
In a small bowl, mash the avocados with 1 tablespoon lemon juice and 1/4 teaspoon salt, then set aside.
In a medium bowl, mix together mayonnaise, honey, onion powder, dried basil, the remaining lemon juice and salt, and black pepper to taste until smooth.
Stir the shredded chicken into the mayonnaise mixture until fully coated.
Warm each spinach wrap briefly in a dry skillet over medium heat for about 15 seconds on each side or microwave for 10 to 15 seconds to make them flexible.
Lay one wrap flat and spread one-quarter of the mashed avocado down the center leaving about 2 inches of space on both sides.
Add one-quarter of the lettuce, tomato, two whole bacon strips, one-quarter of the chicken mixture, and a portion of shredded cheese on top of the avocado.
Fold in one side of the wrap snugly over the filling and roll it tightly away from you while tucking in the edges. Cut the wrap diagonally in half and repeat with the remaining wraps.
Serve the wraps immediately to enjoy the crisp bacon and fresh flavors.
