A creamy and flavorful soup combining sharp cheddar cheese, garlic, and fresh herbs with tender Yukon Gold potatoes for a comforting and hearty meal perfect for any season.

  • 2.5 lbs Yukon Gold potatoes peeled and cubed into ½-inch pieces
  • 4 tablespoons unsalted butter
  • 1 large yellow onion finely chopped
  • 56 cloves garlic minced
  • ¼ cup all-purpose flour
  • 4 cups low-sodium chicken broth
  • 2 cups whole milk
  • ½ cup heavy cream
  • 2 cups sharp cheddar cheese freshly shredded
  • 1 tablespoon fresh parsley finely chopped
  • 1 tablespoon fresh chives finely chopped
  • 1 teaspoon fresh thyme leaves

Instructions

  1. Melt butter in a large pot over medium heat.
  2. Add chopped onion and garlic and sauté until softened and fragrant.
  3. Stir in flour and cook for 1-2 minutes to form a roux.
  4. Gradually whisk in chicken broth and milk, stirring constantly to avoid lumps.
  5. Add cubed potatoes and bring to a boil, then reduce heat and simmer until potatoes are tender about 15-20 minutes.
  6. Use an immersion blender to purée soup partially leaving some chunks for texture.
  7. Stir in heavy cream and shredded cheddar cheese until melted and smooth.
  8. Add fresh herbs parsley chives and thyme and season with salt and pepper to taste.
  9. Simmer for an additional 5 minutes and serve warm.

Notes

  • For extra richness use half-and-half instead of milk
  • Avoid pre-shredded cheese for better melting
  • Garnish with additional fresh herbs or crispy bacon bits if desired
