- Shrimp 1 lb peeled and deveined
- Fresh Spinach 2 cups packed
- Heavy Cream 1 cup
- Cream Cheese 4 oz
- Grated Parmesan Cheese ½ cup
- Olive Oil 2 tbsp
- Garlic 3 cloves minced
- Salt and Pepper to taste
- Red Pepper Flakes optional for a kick
Instructions
- Cook penne pasta according to package instructions and drain.
- Heat olive oil in a pan over medium heat and sauté garlic until fragrant.
- Add shrimp and cook until pink and opaque.
- Stir in heavy cream and cream cheese until melted and smooth.
- Add grated Parmesan cheese and stir to combine.
- Fold in fresh spinach and cook until wilted.
- Add cooked penne pasta, season with salt, pepper, and red pepper flakes to taste, and toss to coat evenly.
- Serve hot.
