  • 1 pound Pulled Rotisserie Chicken
  • 14 oz (3 cups) Frozen Onions and Peppers*
  • 15 oz can Black Beans drained and rinsed
  • 1 cup (140g) Frozen Fire Roasted Corn
  • 8 Flour Protein Tortillas**
  • 2 cups Low Fat Cottage Cheese
  • 4 oz Diced Green Chiles
  • 1 packet Taco Seasoning
  • 2 oz Colby Jack Cheese
  • 12 Tablespoons Water as needed

Instructions

  1. Add all the cheese sauce ingredients except the water to a food processor or blender and blend until smooth using water if needed to thin the sauce.
  2. Heat a large pan over medium heat and add the frozen peppers and onions; cook for 4-5 minutes to thaw.
  3. Add the pulled chicken, beans, and corn to the pan and cook for 2-3 minutes until heated through.
  4. Remove the pan from heat and stir in the cheese sauce.
  5. Place 8 oz of the cheesy chicken mixture on each tortilla and roll tightly.
  6. Heat a griddle or nonstick skillet over medium heat and grill the burritos for 30-60 seconds per side until golden brown.
