A quick and delicious Chicken Caesar Pasta Salad combining tender chicken, crunchy Romaine, and a tangy homemade Caesar dressing perfect for summer meals.
Ingredients

- 2 teaspoons Dijon mustard
- 2 Tablespoons fresh lemon juice
- 2 teaspoons Worcestershire sauce
- 3/4 cup mayonnaise
- 2 teaspoons minced garlic
- 1 teaspoon anchovy paste
- 1/3 cup finely grated Parmesan cheese
- 8 oz uncooked pasta such as rotini or penne
- 2 hearts of Romaine
- shredded rotisserie chicken or chopped chicken breasts
- croutons optional
- Parmesan cheese for serving
Instructions
- Cook pasta according to package instructions until al dente then drain and cool.
- In a bowl whisk together Dijon mustard, lemon juice, Worcestershire sauce, mayonnaise, minced garlic, anchovy paste, and Parmesan cheese to make the dressing.
- Chop Romaine lettuce and combine with cooled pasta and shredded chicken.
- Toss salad with the Caesar dressing until evenly coated.
- Top with croutons and extra Parmesan cheese if desired and serve.
Notes
- For best flavor chill salad for 30 minutes before serving
- Use rotisserie chicken for convenience
- Add more lemon juice for a tangier dressing
