1/2 cup butter
4 cups rotisserie chicken meat shredded
1 (15 ounce) bag frozen mixed vegetables
1 (11.36 ounce) package Cheddar bay biscuit mix (such as Red Lobster Cheddar Bay Biscuit Mix)
2 cups milk
1 (10.5 ounce) can cream of chicken soup
2 cups chicken stock
2 tablespoons fresh chopped parsley (optional)
Instructions
Preheat your oven according to the biscuit mix instructions.
In a large skillet, melt 1/2 cup butter over medium heat.
Add shredded chicken and frozen mixed vegetables; cook until heated through.
Stir in cream of chicken soup, chicken stock, and milk; simmer until slightly thickened.
Transfer mixture to a baking dish.
Prepare the Cheddar bay biscuit mix as directed and drop biscuit dough over the chicken mixture.
Bake according to biscuit mix package instructions until biscuits are golden brown.
Garnish with fresh chopped parsley if desired and serve warm.
Notes
For best flavor use fresh rotisserie chicken and serve immediately
