This chicken fettuccine alfredo offers a creamy parmesan garlic sauce that beautifully coats the pasta. It is perfect for recipes using pasta and features tender garlic-seasoned chicken, making a flavorful chicken alfredo fettuccine recipe.

Ingredients

  • 4 ounces cream cheese (I use 1/2 block of Philly) softened
  • 1 cup freshly grated parmesan cheese
  • 8 ounces uncooked fettuccine
  • 2 large boneless skinless chicken breasts
  • 1/2 teaspoon garlic powder
  • Salt & pepper to taste
  • Flour for dredging
  • 1 tablespoon olive oil
  • 3 tablespoons butter divided
  • 1 cup heavy or whipping cream
  • 1/4 cup chicken broth
  • 2 large cloves garlic minced

Instructions

  1. Soften the cream cheese by leaving it out at room temperature for at least 30 minutes or warm it in the microwave for 20 to 30 seconds.
  2. Boil salted water in a large pot and cook the fettuccine to al dente according to the package instructions.
  3. Slice each chicken breast lengthwise into two thinner pieces, then season both sides with garlic powder, salt, and pepper, and coat with flour.
  4. Heat olive oil and 1 tablespoon of butter in a deep skillet over medium-high heat and cook the chicken for 5 minutes on each side until golden and fully cooked, then remove from the pan and set aside.
  5. Clean the skillet if necessary, then melt the remaining 2 tablespoons of butter with the cream cheese, heavy cream, chicken broth, and minced garlic over medium heat. Stir until the cream cheese fully dissolves and the mixture is smooth.
  6. Let the sauce simmer gently for 5 minutes to slightly reduce, stirring occasionally, while slicing the chicken into bite-sized strips.
  7. Add the parmesan cheese to the sauce, cook for another minute until thickened, adjusting consistency with some pasta water if needed, and season with salt and pepper to taste.
  8. Drain the cooked fettuccine and toss it in the skillet with the sauce. Plate the pasta with the sliced chicken on top or mixed in, and garnish with extra parmesan cheese if desired.

Notes

  • I do not recommend subbing the heavy cream for anything
  • Alfredo sauce can easily separate if you’re making it with milk or something with a lower fat content
  • This is definitely a treat meal
