  • 4 boneless skinless chicken breasts (1 lb)
  • 2 cloves garlic minced
  • 2 medium carrots diced
  • 1 cup frozen peas
  • 1 medium yellow onion chopped
  • 4 tbsp unsalted butter
  • 1/3 cup all-purpose flour
  • 2 cups low-sodium chicken broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • 1 pie crust (store-bought or homemade)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Season chicken with salt and pepper and bake in a greased dish for 20-25 minutes until cooked through.
  3. Chop onion carrots and garlic.
  4. Melt butter in a skillet over medium heat and sauté onions for about 5 minutes.
  5. Add garlic and cook until fragrant.
  6. Sprinkle flour over the mixture and stir constantly for about 2 minutes to form a roux.
  7. Gradually whisk in chicken broth and heavy cream and simmer until thickened about 5 minutes.
  8. Add cooked chicken carrots and peas and mix well.
  9. Pour filling into a baking dish and cover with pie crust.
  10. Seal edges and cut slits for ventilation.
  11. Bake for 30-35 minutes until golden brown.
  12. Allow to cool slightly before serving.

Notes

  • For crisp tops, broil 2–3 minutes at the end
