  • 1 tablespoon olive oil
  • 3 carrots peeled and diced
  • half of an onion diced
  • 3 cloves garlic minced
  • 810 cups chicken broth
  • 1 cup whole wheat orzo
  • 3-ish cups cooked chicken I use shredded rotisserie chicken
  • 3 eggs
  • juice of 34 lemons about 1/2 cup
  • a handful of fresh spinach
  • 1 1/2 teaspoons salt
  • lots of freshly ground pepper
  • as much fresh dill as you can handle

Instructions

  1. Warm a large pot over medium heat and add olive oil followed by the carrots, onion, and garlic. Cook these together for about 10 minutes until they soften and release their aroma, ensuring not to burn the garlic.
  2. Pour in the chicken broth and bring the mixture to a gentle simmer. Stir in the orzo and let it cook until it becomes tender. Then add the shredded chicken and remove the pot from the heat.
  3. In a small bowl, whisk the eggs and freshly squeezed lemon juice together. Gradually add a bit of the hot soup into the egg mixture to gently temper it. Then slowly stir this mixture back into the soup pot, stirring continuously to keep the soup smooth and creamy.
  4. Finish off by mixing in the fresh spinach, salt, pepper, and dill. Taste and adjust the seasoning if needed, then serve warm.

Notes

  • Broth: Choose 8 cups for a heartier soup or up to 10 cups if you prefer a more broth-like texture
  • Leftovers: The orzo will absorb liquid as it sits, so thin the soup with extra broth when reheating if necessary
  • Eggs: Temper the eggs carefully by gradually mixing with soup liquid to avoid scrambling
  • You can add ice cubes to cool the soup faster before adding the egg mixture
  • Vegetarian option: Substitute chicken with white beans or another plant-based protein for a meat-free version
