Light, fluffy, and totally guilt-free—this 3-ingredient cloud bread is a keto-friendly, gluten-free snack or sandwich base you can whip up in under 40 minutes. Perfect for meal prep or when you’re craving something warm and fluffy without the carbs.

Ingredients

  • 3 large eggs, separated
  • 3 tablespoons cream cheese (or plain Greek yogurt)
  • ¼ teaspoon cream of tartar (or ½ tsp lemon juice as sub)

Instructions

  1. Preheat oven to 300°F (150°C). Line a baking sheet with parchment paper.
  2. Separate the eggs. Place whites in one bowl, yolks in another.
  3. Add cream of tartar to the egg whites and beat until stiff peaks form.
  4. In the other bowl, whisk yolks with cream cheese until smooth and creamy.
  5. Gently fold yolk mixture into egg whites using a spatula. Be careful not to deflate the whites.
  6. Spoon into 6 even dollops on your baking sheet.
  7. Bake for 25–30 minutes, until golden brown and slightly springy.
  8. Let cool for 5–10 minutes, then serve or store.

Notes

  • For sweet cloud bread: add ½ tsp vanilla + ½ tsp cinnamon
  • For savory: toss in Italian herbs or a pinch of parmesan
  • Store in fridge (3–4 days) or freezer (2 weeks). Reheat in toaster oven!
