Light, fluffy, and totally guilt-free—this 3-ingredient cloud bread is a keto-friendly, gluten-free snack or sandwich base you can whip up in under 40 minutes. Perfect for meal prep or when you’re craving something warm and fluffy without the carbs.

- 3 large eggs, separated
- 3 tablespoons cream cheese (or plain Greek yogurt)
- ¼ teaspoon cream of tartar (or ½ tsp lemon juice as sub)
Instructions
- Preheat oven to 300°F (150°C). Line a baking sheet with parchment paper.
- Separate the eggs. Place whites in one bowl, yolks in another.
- Add cream of tartar to the egg whites and beat until stiff peaks form.
- In the other bowl, whisk yolks with cream cheese until smooth and creamy.
- Gently fold yolk mixture into egg whites using a spatula. Be careful not to deflate the whites.
- Spoon into 6 even dollops on your baking sheet.
- Bake for 25–30 minutes, until golden brown and slightly springy.
- Let cool for 5–10 minutes, then serve or store.
Notes
- For sweet cloud bread: add ½ tsp vanilla + ½ tsp cinnamon
- For savory: toss in Italian herbs or a pinch of parmesan
- Store in fridge (3–4 days) or freezer (2 weeks). Reheat in toaster oven!
