Ingredients

  • Russet potatoes
  • Chicken or vegetable broth
  • Onion
  • Garlic
  • Heavy cream
  • Sharp cheddar cheese
  • Sour cream
  • Bacon
  • Green onions
  • Salt and pepper
  • Olive oil
  • Dried thyme
  • Smoked paprika

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced onion and cook until soft and translucent.
  3. Add minced garlic and sauté for one minute.
  4. Add diced potatoes and pour in broth.
  5. Season with dried thyme smoked paprika salt and pepper.
  6. Bring to a boil then simmer until potatoes are tender.
  7. Blend soup with immersion blender leaving some chunks.
  8. Stir in heavy cream shredded cheddar cheese and sour cream until smooth.
  9. Warm on low heat for five minutes.
  10. Serve topped with crumbled bacon extra cheese and green onions.

Notes

  • For crisp tops, broil 2–3 minutes at the end
