  • 1 cup + 2 tablespoons all-purpose flour
  • 1 teaspoon cornstarch
  • 3/4 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 4 tablespoons unsalted butter softened at room temperature
  • 1/2 cup plus 2 tablespoons granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 10 Oreo or chocolate sandwich cookies coarsely chopped
  • 1/2 cup white chocolate chips

Instructions

  1. Heat your oven to 350 degrees F and prepare baking sheets with parchment paper or silicone mats.
  2. In a small bowl, combine flour, cornstarch, baking powder, baking soda, and salt, then set aside.
  3. With a mixer, cream the softened butter and sugar on medium speed until mixed well.
  4. Beat in the egg and vanilla extract until the batter is smooth, scraping down the bowl edges as needed.
  5. Lower the mixer speed and gradually add the dry ingredients, mixing just until dough comes together. Then fold in the chopped Oreo cookies and white chocolate chips evenly.
  6. Use a small cookie scoop to portion dough (about 2 tablespoons), shape into balls, and slightly flatten them on the baking sheets.
  7. Bake the cookies for 8 to 10 minutes until the edges are firm but centers remain somewhat soft. Remove from oven and allow cookies to cool on the sheets briefly before transferring them to a rack to cool completely.
