10 large eggs
1 cup cottage cheese
1 cup shredded cheddar cheese
1 cup diced bell peppers (any color)
1 cup fresh spinach chopped
½ cup chopped onions
½ cup cooked bacon or sausage optional
½ tsp salt
¼ tsp black pepper
¼ tsp garlic powder
Non-stick spray or butter for greasing the baking dish
Instructions
Heat your oven to 375°F or 190°C and coat a 9×13 inch baking dish with non-stick spray or butter.
Beat the eggs in a large bowl until smooth then fold in cottage cheese evenly.
Add shredded cheddar cheese, diced bell peppers, chopped spinach, onions, and optional cooked bacon or sausage seasoning with salt, black pepper, and garlic powder and mix thoroughly.
Transfer the mixture to the baking dish and smooth the surface with a spatula.
Bake for 35 to 40 minutes until bubbly and golden with a knife inserted in the center coming out clean.
Let the casserole rest for 5 minutes before serving to set.
