2 pounds beef chuck roast
1 tablespoon olive oil
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
2 cups beef broth
1 tablespoon Worcestershire sauce
1 tablespoon soy sauce
4 hoagie rolls
4 slices provolone cheese optional
Fresh parsley for garnish optional
Instructions
Dry the beef chuck roast thoroughly and apply olive oil along with salt, black pepper, garlic powder, and onion powder evenly on all sides.
Heat a skillet over medium-high heat and brown the beef by searing each side for about 3 to 4 minutes to enhance flavor, though this can be skipped.
Place the roast into the Crockpot whether browned or not.
Combine the beef broth, Worcestershire sauce, and soy sauce in a bowl then pour the mixture over the roast in the Crockpot.
Cover and cook on low heat for 8 hours or until the beef is tender and easily shredded.
When done, remove the roast and let it rest for 5 minutes before shredding using two forks.
Return the shredded beef to the Crockpot to soak in the juices briefly.
Slice the hoagie rolls open, optionally melt provolone cheese on them under the broiler for 1 to 2 minutes, then fill with the shredded beef.
Serve the sandwiches alongside small bowls of au jus with optional parsley garnish.

For added flavor, consider adding sliced onions or bell peppers to the Crockpot during cooking
