  • 2 15-ounce cans white beans drained and rinsed
  • 2 cups chicken broth
  • 1 4-ounce can diced green chiles
  • 1 medium onion chopped
  • 2 cloves garlic minced (or 1 teaspoon garlic powder)
  • 4 ounces cream cheese or ½ cup sour cream
  • 1 cup shredded cheddar or Monterey Jack cheese optional
  • 1 tablespoon lime juice
  • 1 teaspoon ground cumin
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon chili powder
  • Optional: 1 cup corn frozen or canned
  • 2 tablespoons chopped cilantro
  • 1 (15-ounce) can white corn or hominy
  • hot sauce to taste

Instructions

  1. In a large pot, sauté the chopped onion and minced garlic over medium heat until translucent.
  2. Add the cooked shredded chicken, white beans, chicken broth, diced green chiles, ground cumin, salt, black pepper, and chili powder to the pot. Stir to combine.
  3. Bring the mixture to a simmer and cook for about 15 minutes to let the flavors meld.
  4. Stir in the cream cheese or sour cream until melted and creamy.
  5. Add the lime juice and optional corn, cilantro, and white corn or hominy. Cook for an additional 5 minutes.
  6. Sprinkle shredded cheddar or Monterey Jack cheese on top if desired before serving.
