12 ounces egg noodles
2 tablespoons butter
1 large yellow onion diced
3 cloves garlic minced
1½ cups frozen mixed vegetables thawed
1 teaspoon dried thyme
2 tablespoons all-purpose flour
1 cup chicken broth
1 cup heavy cream
2 cups cooked chicken breast shredded
Salt and pepper to taste
2 tablespoons fresh parsley chopped
Instructions
Prepare egg noodles as instructed on the package until just tender, then drain and set aside.
Warm butter in a large skillet over medium heat, then add diced onion, minced garlic, and mixed vegetables. Season with thyme, salt, and pepper, cooking until onions soften, about 5 minutes.
Sprinkle flour over the vegetables and stir well to combine. Slowly pour in chicken broth and heavy cream, stirring continuously until the sauce thickens and becomes creamy, about 5 minutes.
Return the cooked noodles and shredded chicken to the skillet, mixing thoroughly to coat everything in the sauce. Adjust seasoning with more salt and pepper as needed.
Garnish with fresh chopped parsley before serving to add color and fresh taste.
