  • 1.5 to 2 lbs boneless skinless chicken breasts
  • 2 (15 oz) cans white beans (cannellini or great northern) drained and rinsed
  • 1 (15 oz) can corn drained
  • 1 (4 oz) can diced green chilies
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 4 cups chicken broth
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • ½ tsp dried oregano
  • ½ tsp salt (adjust to taste)
  • ¼ tsp black pepper
  • 4 oz cream cheese softened and cut into cubes
  • ½ cup sour cream
  • Fresh cilantro chopped for garnish
  • 1 avocado diced for garnish
  • Shredded cheddar or Mexican cheese blend for garnish
  • Lime wedges (optional)

Instructions

  1. Add ingredients to your crockpot including chicken breasts, drained white beans, corn, diced green chilies, minced garlic, chopped onion, chicken broth, cumin, chili powder, oregano, salt, and black pepper.
  2. Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours until chicken is fully cooked and tender.
  3. Remove the chicken breasts and shred them. Return shredded chicken to crockpot. Add cream cheese cubes and stir until melted. Stir in sour cream until chili is creamy.
  4. Ladle chili into bowls and garnish with fresh cilantro, diced avocado, shredded cheese, sour cream, and lime wedges as desired.
