Ingredients

  • 1 lb boneless skinless chicken breasts cut into bite-sized pieces
  • 1 lb potato gnocchi fresh or store-bought
  • 4 cloves garlic minced
  • 1 cup heavy cream or dairy-free alternative
  • ½ cup chicken broth or vegetable broth for a vegetarian option
  • ½ cup grated Parmesan cheese
  • 2 tbsp olive oil or unsalted butter
  • 1 tsp Italian seasoning
  • 1 cup spinach or kale optional
  • Salt and pepper to taste
  • Red pepper flakes optional

Instructions

  1. Heat 1 tablespoon of olive oil in a large skillet over medium heat and season chicken with salt pepper and Italian seasoning.
  2. Cook chicken 6-7 minutes until golden and cooked through then remove from skillet.
  3. Add remaining olive oil and gnocchi to skillet and cook 3-4 minutes until golden then remove.
  4. Add garlic to skillet and sauté 1-2 minutes until fragrant.
  5. Pour in chicken broth scraping browned bits then stir in heavy cream and Parmesan cooking 2-3 minutes until sauce thickens.
  6. Return chicken and gnocchi to skillet and toss to coat.
  7. Stir in spinach if using and cook 1-2 minutes until wilted.
  8. Adjust seasoning and serve hot garnished as desired.
