Heat a skillet over medium heat and cook shrimp until pink and cooked through about 2-3 minutes per side. Remove shrimp and set aside. In the same skillet melt butter then add minced garlic and sauté until fragrant about 1 minute. Stir in heavy cream Parmesan cheese and Dijon mustard and simmer until thickened about 3-5 minutes. Return shrimp to the skillet and coat with the creamy sauce. Meanwhile boil potatoes in salted water until tender about 15 minutes then drain. Mash potatoes with warm milk butter and salt until smooth and creamy. Serve shrimp and creamy garlic sauce over mashed potatoes and garnish with fresh thyme leaves.
