1 lb large shrimp peeled and deveined
2 tablespoons olive oil
1 teaspoon paprika
1 teaspoon garlic powder
salt and pepper to taste
2 tablespoons butter
4 cloves garlic minced
1 cup heavy cream
½ cup grated Parmesan cheese
1 teaspoon Dijon mustard optional
fresh thyme leaves for garnish
2 lbs potatoes peeled and cubed
½ cup warm milk
¼ cup butter
salt to taste
Peel and devein the shrimp then toss with olive oil paprika garlic powder salt and pepper.
Heat a skillet over medium heat and cook shrimp until pink and cooked through about 2-3 minutes per side. Remove shrimp and set aside.
In the same skillet melt butter then add minced garlic and sauté until fragrant about 1 minute.
Stir in heavy cream Parmesan cheese and Dijon mustard and simmer until thickened about 3-5 minutes.
Return shrimp to the skillet and coat with the creamy sauce.
Meanwhile boil potatoes in salted water until tender about 15 minutes then drain.
Mash potatoes with warm milk butter and salt until smooth and creamy.
Serve shrimp and creamy garlic sauce over mashed potatoes and garnish with fresh thyme leaves.
Notes
Ensure not to overcook the shrimp for tender juicy results
You can substitute Dijon mustard with a pinch of cayenne pepper for added heat
