This Hobo Casserole is a comforting and creamy beef casserole perfect for family dinners. Easy to prepare and packed with layers of seasoned ground beef, potatoes, soup, and cheese, it’s a delicious hearty meal everyone will love.

Ingredients

  • 1 pound ground beef
  • 1 medium onion chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 4 medium potatoes thinly sliced
  • 1 can 10.5 ounces cream of mushroom soup
  • ½ cup milk
  • 1 ½ cups shredded cheddar cheese
  • ½ teaspoon paprika optional for garnish
  • 1 tablespoon butter melted

Instructions

  1. Preheat your oven to 375°F and grease a 9×13-inch baking dish.
  2. Peel and thinly slice potatoes evenly.
  3. Cook ground beef and chopped onion in a skillet until beef is browned and onions are soft then drain excess grease.
  4. Season beef mixture with garlic powder, onion powder, salt, and black pepper and stir well.
  5. Layer half the potatoes in the baking dish, then half the beef mixture, repeat with remaining potatoes and beef.
  6. Mix cream of mushroom soup with milk and pour evenly over casserole layers.
  7. Sprinkle shredded cheddar cheese on top and drizzle melted butter over the cheese.
  8. Cover with foil and bake for 45 minutes then remove foil and bake an additional 15 minutes until cheese is bubbly and golden.
  9. Let rest 5-10 minutes, sprinkle paprika if desired, then serve.

Notes

  • For crisp tops, broil 2–3 minutes at the end
