  • 1 lb sweet Italian sausage
  • 2 tablespoons olive oil
  • 1 large onion diced
  • 3 garlic cloves minced
  • 6 cups chicken broth
  • 1 cup heavy cream
  • 1 1/2 cups ditalini pasta
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon red pepper flakes optional
  • Salt and pepper to taste
  • 4 cups fresh spinach roughly chopped
  • 1 cup grated Parmesan cheese plus more for garnish
  • Fresh parsley chopped for garnish

Instructions

  1. Cook the Italian sausage in a large pot over medium heat, breaking it apart until browned then remove it from the pot.
  2. Heat olive oil in the same pot and cook the diced onion until soft and clear, then add minced garlic and sauté briefly.
  3. Pour in chicken broth and bring to a boil, then reduce heat to low and add heavy cream, oregano, basil, red pepper flakes, salt, and pepper.
  4. Stir in ditalini pasta and simmer until pasta is tender but firm, about 8 minutes.
  5. Add the cooked sausage and chopped spinach to the pot, cooking just until spinach has wilted.
  6. Remove from heat and mix in the grated Parmesan cheese until melted and combined.
  7. Ladle soup into bowls and garnish with extra Parmesan and fresh parsley if you like.
