1 tablespoon olive oil
15 oz Italian sausage crumbled
8 oz rigatoni uncooked
1 cup chicken broth
1 cup heavy cream
4 cloves garlic minced
1 teaspoon Italian seasoning or Herbs de Provence
15 oz tomato sauce
5 oz fresh spinach
salt
coarsely ground black pepper
red pepper flakes optional
Heat olive oil in a skillet over medium heat.
Add crumbled sausage and cook until browned.
Stir in minced garlic and Italian seasoning, cook for 1 minute.
Add tomato sauce, chicken broth, and heavy cream, simmer for 5 minutes.
Meanwhile, cook rigatoni according to package instructions until al dente.
Drain pasta and add to the sauce along with fresh spinach.
Stir well until spinach wilts, season with salt, pepper, and red pepper flakes.
Serve warm.
Notes
For extra creaminess, add more heavy cream or a sprinkle of parmesan cheese before serving
