  • 4 pieces boneless skinless chicken breasts (About 1.5 pounds)
  • 1 cup rice (Uncooked)
  • 2 cups chicken broth
  • 1 cup heavy cream (Can be substituted with half-and-half or a non-dairy product)
  • 1 medium onion (Diced)
  • 3 cloves garlic (Minced)
  • 1 cup frozen peas (Optional)
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon dried thyme
  • ½ teaspoon parsley (Fresh or dried for garnish)

Instructions

  1. Dry the chicken breasts with paper towels and season both sides well with salt black pepper paprika and dried thyme. Chop the onion and mince the garlic.
  2. In a medium saucepan combine 1 cup of rice with 2 cups of chicken broth and a pinch of salt. Bring it to a boil then cover tightly and simmer on low heat for 15 to 18 minutes until the liquid is absorbed. Remove from heat and let it rest covered for 5 minutes before fluffing with a fork.
  3. Heat olive oil in a large heavy skillet over medium-high heat until shimmering. Add the seasoned chicken pieces and cook for 4 to 6 minutes on each side until golden brown. Remove chicken and set aside.
  4. Lower heat to medium and sauté the diced onion in the same skillet for 5 to 7 minutes until soft and translucent. Add minced garlic and cook for another minute until fragrant.
  5. Pour in chicken broth scraping up browned bits and bring to a simmer. Stir in heavy cream and frozen peas if using. Nestle the chicken back into the sauce then cover and cook on low heat for 15 to 20 minutes until chicken is fully cooked and sauce thickens slightly. Adjust seasoning with salt and pepper as needed.
  6. Serve the cooked rice onto plates and top with the creamy smothered chicken and sauce. Garnish with chopped parsley and enjoy immediately.
