This creamy smothered chicken with rice is a comforting and easy meal, combining tender chicken thighs in a rich cream sauce served over fluffy white rice. Perfect for a cozy dinner any night.

  • 2 lbs chicken thighs or chicken breasts
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 1 small onion diced
  • 3 cloves garlic minced
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 1/2 teaspoon salt adjust to taste
  • 1/2 teaspoon black pepper
  • 1 teaspoon cornstarch mixed with 1 tablespoon water to thicken if needed
  • 1 1/2 cups long-grain white rice
  • 3 cups water or chicken broth

Instructions

  1. Season the chicken with salt, pepper, garlic powder, onion powder, and paprika.
  2. Heat olive oil in a large skillet over medium heat and brown chicken on both sides.
  3. Remove chicken and set aside.
  4. In the same skillet, melt butter, sauté diced onion and minced garlic until translucent.
  5. Add chicken broth, heavy cream, dried thyme, dried parsley, salt, and pepper. Bring to a simmer.
  6. Return chicken to the skillet and cook covered until chicken is cooked through.
  7. If sauce is thin, mix cornstarch with water and add to sauce to thicken.
  8. Meanwhile, cook rice with water or chicken broth according to package instructions.
  9. Serve smothered chicken over cooked rice.

Notes

  • For extra flavor, marinate the chicken for an hour before cooking
  • Adjust cream and broth ratio depending on creaminess preference
