  • 2 tablespoons olive oil
  • ½ cup grated Parmesan cheese
  • ¾ cup panko breadcrumbs
  • 1 teaspoon lemon zest
  • ½ teaspoon garlic powder
  • Salt and freshly ground black pepper to taste
  • 2 tablespoons unsalted butter melted
  • 1 tablespoon fresh parsley chopped
  • 1 lemon cut into wedges for serving

  1. Dry the cod fillets thoroughly to prevent the coating from becoming soggy and brush them lightly with olive oil, then sprinkle both sides with salt, pepper, and garlic powder.
  2. Combine Parmesan, panko, lemon zest, and a pinch of salt in a shallow dish and mix well.
  3. Press each fillet firmly into the Parmesan mixture so it sticks evenly, then set aside on a plate for 3 to 5 minutes to help the crust form.
  4. Preheat your air fryer to 400°F (200°C) for 3 minutes to ensure a crisp crust.
  5. Spray the air fryer basket lightly with cooking spray and place the fillets in a single layer without overlapping.
  6. Cook the cod for 6 minutes, then turn them carefully and continue cooking for another 4 to 5 minutes until the fish flakes easily and the crust is deep golden.
