  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup sparkling water
  • 1 lemon
  • 2 tablespoons butter
  • 4 cod fillets
  • 2 tablespoons butter
  • 2 cloves garlic (minced)
  • Juice of 1/2 lemon
  • 2 tablespoons chopped parsley
  • Roasted potatoes
  • Crispy cod fillets from step 3
  • Lemon butter sauce from step 4
  • Fresh parsley
  • Lemon wedges

Instructions

  1. Combine flour baking powder salt and black pepper in a large bowl then whisk in sparkling water gradually until the batter is smooth.
  2. Slice the lemon into wedges and keep them ready for serving.
  3. Set oven to 400°F 200°C then heat a skillet over medium-high and melt 2 tablespoons of butter. Dip each cod fillet into the batter letting excess drip off then fry each side for 3 to 4 minutes until crispy and golden.
  4. In the same pan melt remaining 2 tablespoons of butter then cook minced garlic until fragrant. Add juice of half a lemon and chopped parsley stirring well to create lemon butter sauce.
  5. Serve by placing roasted potatoes on a platter arranging crispy cod on top then drizzle with lemon butter sauce. Garnish with fresh parsley and lemon wedges on the side.

Notes

  • For crisp tops, broil 2–3 minutes at the end
