  • 10.5 oz cabbage
  • 5.5 oz carrots
  • ½ teaspoon fine sea salt + more if needed
  • 1 teaspoon sweet paprika
  • 1 teaspoon thyme
  • ½ teaspoon garlic powder
  • ½ teaspoon red pepper flakes
  • ½ teaspoon ground black pepper
  • 5 tablespoons dry breadcrumbs
  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • ¾ cup + 2 tablespoons cold water
  • 2 tablespoons soy sauce
  • 3 tablespoons vegetable oil + more if needed

Instructions

  1. Thinly slice the cabbage and grate the carrots using small holes of a box grater, then place them in a bowl. Sprinkle with salt and massage the mixture until the cabbage softens.
  2. Mix in the breadcrumbs, flour, baking powder, and all spices thoroughly. Pour in the cold water and soy sauce, stirring well. Add extra salt if needed.
  3. Heat one tablespoon of oil in a large skillet over medium-low heat. Drop heaping spoonfuls of the mixture into the pan and gently press them flat. Fry for about 3 minutes on each side until golden brown.
  4. Transfer fritters to paper towels to absorb excess oil. Repeat frying with remaining batter, adding more oil as needed. Serve the fritters warm.
