  • 2 medium sweet potatoes peeled optional and cut into fries
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika smoked paprika is optional for extra flavor
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon cornstarch for extra crispiness optional

Instructions

  1. Heat your oven to 425°F 220°C and place a baking sheet inside to warm up.
  2. Wash and peel the sweet potatoes if you like then slice them into fries about ¼ inch thick ensuring they are evenly sized.
  3. Soak the cut fries in cold water for 30 minutes to help remove starch for better crisping.
  4. Drain the fries and dry thoroughly with paper towels then toss them in a bowl with olive oil, garlic powder, paprika, salt, black pepper and cornstarch if using.
  5. Take out the hot baking sheet and arrange the fries evenly without overcrowding.
  6. Bake for 25 to 30 minutes turning halfway until they are crispy and golden.
  7. Let the fries cool briefly before serving for the best texture.

Notes

  • For crisp tops, broil 2–3 minutes at the end
