Ingredients

Scale
  • 2 ½ pounds boneless skinless chicken thighs
  • ½ cup soy sauce (I prefer light soy sauce)
  • ½ cup honey
  • ¼ cup ketchup
  • 5 cloves garlic minced (about 5 teaspoons)
  • 1 ½ teaspoons fresh minced ginger
  • 1 teaspoon sesame oil
  • ½ teaspoon crushed red pepper flakes (optional)
  • ¼ cup water
  • 2 Tablespoons cornstarch
  • Optional toppings: sesame seeds
  • sliced green onions

Instructions

  1. Put the chicken thighs into your slow cooker.
  2. In a separate bowl, combine the soy sauce, honey, ketchup, minced garlic, minced ginger, sesame oil and red pepper flakes if you want some heat.
  3. Pour this sauce over the chicken in the slow cooker.
  4. Cook covered on low for 3 to 5 hours or on high for 2 to 3 hours until the chicken is fully cooked and tender.
  5. Avoid lifting the lid during cooking to keep the chicken tender.
  6. Once cooked, take out the chicken and shred it with forks.
  7. Mix water and cornstarch in a small bowl to create a slurry.
  8. Stir the slurry and shredded chicken back into the sauce in the slow cooker.
  9. Cook on high for another 15 to 20 minutes until the sauce has thickened.
  10. Serve with your choice of rice, noodles or vegetables and garnish with sesame seeds and green onions if you like.
