Ingredients

  • 1 can black beans (drained)
  • 1 can white beans (drained)
  • 1 can corn (undrained)
  • 1 can Rotel (undrained)
  • 1 packet Ranch seasoning
  • 1 tbsp cumin
  • 1 tbsp chili powder
  • 1 tsp onion powder
  • 8 oz cream cheese (1 block)
  • 2 chicken breasts
  • 1 can water

Instructions

  1. Add black beans, white beans, corn, Rotel, Ranch seasoning, cumin, chili powder, onion powder, and water to the crock pot.
  2. Place the chicken breasts on top of the mixture.
  3. Cook on low for 6 hours.
  4. Remove the chicken breasts and shred them with two forks.
  5. Return shredded chicken to crock pot and add cream cheese.
  6. Stir until cream cheese is melted and well combined.
  7. Serve hot and enjoy.

Notes

  • For a thicker chili, cook uncovered for the last 30 minutes
  • You can also add toppings like shredded cheese, sour cream, or fresh cilantro
